Design a logo for a quirky Colonial American style décor B&B called The Bishop and The Bison

We are a small boutique bed and breakfast located in York. We have a quirky decor style based around Colonial America. Our name combines the bishop of York Minster and the bison of the Great Plains. We want the logo to have some personality, for example the bison sticks out his tongue!

We want something clean that can be printed on t-shirts for our staff. Ideally, we're looking for a bison head with a bishop's mitre on it, or something else pictorial that represents our business's name. I attach what we have used to date, but we think it's too busy and want something new that is cleaner/simpler.
